Oakmont of Escondido Hills is a lovely retirement community situated on a lush six-acre campus with lovely views of the Escondido Hills, and is within walking distance of Westfield’s North County Fair Shopping Mall. We are looking to build a team of skilled professionals with a passion for working with seniors and a desire to play an important role working at the finest Senior Housing Community in the Escondido area. We are currently seeking a skilled and experienced Cooks and Lead Line Cooks!

With our on-site 5-star quality restaurants, and a team of award winning chefs, Oakmont has established itself as a ‘cut-above’ the rest in the culinary world. Our culinary program has been described as a Chef’s playground; equipped with a state of the art kitchen including a Wood-Fire pizza oven, a top of the line rotisserie machine, brand new equipment and much more! Our Chefs specialize in creating farm fresh, local, seasonal, from scratch and healthy menus that show case their talents and skill. Our teams are inspired daily by their on-site organic gardens & orchards, which are built and planted by the Chefs choice. Our Chefs are well known in the culinary industry, as many have participated in or been featured in cooking competitions, cooking shows, cooking demonstrations on local television, magazines, newspaper articles, and much more.

POSITION RESPONSIBILITIES OF COOKS:

  • Preparing food in accordance with the approved menu provided by the Culinary Services Director
  • Insuring that the food is prepared following current standards, guidelines and regulations
  • Food is prepared in accordance with the property policies and procedures following sanitary regulations.
  • Prepare meals that are high quality, palatable, visually appealing and appetizing.
  • Assist with special parties and events
  • Following instructions for Resident’s who are on special diets and dietary restrictions.
  • Ensure the kitchen and work areas are always clean and sanitary, safely storing food using proper storage rules and regulations

SPECIFIC KNOWLEDGE, SKILLS, LICENSES, CERTIFICATIONS, ETC:

  • Requires a high school diploma or equivalent
  • Obtain a ServSafe Managers certificate or Food Handlers permit and First Aid Certification
  • Prefer six months food preparation and safe handling of food and equipment.
  • Ability to perform moderately complex math problems for to follow written and oral instructions to follow menus.
  • Read, write and speak English
  • Be able to perform the physical requirements of the job
  • Must pass a pre-employment physical, drug screening, and background check.

POSITION RESPONSIBILITIES OF LEAD LINE COOKS:

  • Prepare and work the line and cook all food items and meals in accordance with planned menus and recipes ensuring all meals and food prepared are of high quality, palatable and appetizing. Assist in food preparation for special meals, parties, events, etc.
  • Prepare soups, appetizers, entrees, vegetables, side dishes, and desserts for both the regular and special diets for the residents, as well as the meals served to the staff and all special events requiring food service.
  • Prepare farm to fork quality products.
  • Assist in completing daily prep list for the line, and assist in delegating line prep tasks to prep cook and line cooks.
  • Plan the timing of food production to coordinate with meal serving hours so that quality, temperature, and appearance of food are preserved.
  • Maintain control over meal portions and food consistency. Estimate food requirements and controls serving portions thereby eliminating waste and leftovers.
  • Assist in maintaining walk-in, freezer, and dry storage; including cleaning, organizing, labeling, and rotating product.
  • Ensure that the next day’s items are in stock and pulled and thawing under refrigeration as dictated by the menus.
  • Open or close kitchen as dictated by department scheduling.
  • Ensure that stock levels of staple/non-staple food, supplies, equipment, etc., are organized and maintained at adequate levels at all times.
  • Work closely with the Sous Chef and Culinary Services Director in specifying and selecting food products.
  • Fills in on sous chef duties on the days where Sous Chef is out; including ordering produce, assisting chef with the supervision of the line and staff, etc.
  • Communicates directly with chef and sous chef on a weekly basis, through a leadership meeting of the Chef, Sous Chef, DRS, and other leads; to ensure that residents needs are being met.
  • Demonstrate flexibility in work schedule as evidenced by working holidays, evenings, weekends and additional shifts when necessary to ensure adequate coverage within the department.

SPECIFIC KNOWLEDGE, SKILLS, LICENSES, CERTIFICATIONS, ETC:

  • Must be eighteen (18) years of age
  • Must have a high school diploma or equivalent
  • Prefer six (6) months experience working in a high end restaurant or similar environment as a cook
  • Creativity, fine dining experience and culinary school background preferred
  • Able to be flexible, adapt and respond to change, make decisions in stressful situations and prioritize tasks and projects.
  • Able to obtain and maintain valid first aid certification
  • Able to obtain and maintain valid Food Handler’s certification
  • Must pass a pre-employment physical, drug screening, and background check.
